Chinese fried rice
Serves 4-6, prep 15 Minutes, Cook 12 Minutes
1½ tablespoons peanut oil, 2 eggs, beaten, 2 chopped ham steaks, 1 tablespoon fresh grated ginger, 2 crushed garlic cloves, 2 cups mixed vegetables (corn, peas, capsicum, green onions, thinly sliced), 2 cups cold cooked long-grain rice, 150g peeled school prawns (small), 2 tablespoons soy sauce, 1 tablespoon Chinese cooking wine, extra green onions, thinly sliced, to serve.
