Ingredients: 1 cup rolled oats, 1 cup plain flour, sifted (see tip, left), 1 cup desiccated coconut, 1 cup brown sugar, 125g unsalted butter, chopped, 1 tablespoon golden syrup, 2 tablespoons boiling water, 1 teaspoon bicarbonate of soda.
Top tip:To get chewier Anzacs, replace ½ cup plain flour with ½ cup of self-raising flour.
