Spring greens slice

1. Preheat oven to moderate, 180°C. Lightly grease a 20cm square baking dish. Sprinkle base with couscous.
   
   
2. Blanch asparagus in a pot of boiling water for 30 seconds. Add peas and cook for a further 30 seconds. Drain well and set aside.
   
   
3. Melt butter in a frying pan on medium. Saute onions for 2-3 minutes, until tender. Spoon into dish. Top with asparagus and peas.
   
   
4. In a large jug, whisk eggs and sour cream together. Season to taste and pour over vegetables. Sprinkle with feta.
   
   
5. Bake for 30-35 minutes, until set. Serve sliced with salad.
