Back to school lunches: Turkey and coleslaw rolls

low-fat mayonnaise, 1/3 cup
natural yoghurt, 1/3 cup
green or red cabbage, finely shredded, 2 cups
carrot, grated, 1 cup
parsley leaves, chopped, 1/3 cup
green onion, 1, thinly sliced
wholemeal rolls, 4 round, halved
roast turkey, 250g, thinly sliced
basil leaves, ¼ cup
- In a large bowl, whisk mayonnaise and yoghurt together. Add cabbage, carrot, parsley and onion. Toss to combine.
- Fill rolls with coleslaw, turkey and basil. Wrap tightly in baking paper or plastic wrap and keep chilled until ready to serve.
- Use sliced bread of choice in place of rolls, if preferred.
