Back to school recipes: Weet-Bix slice

1. Preheat oven to moderate, 180°C. Lightly grease a 20cm x 30cm slice pan and line with baking paper.
   
   
2. In a saucepan, combine dates and water. Bring to the boil on high.
   Boil 3-4 minutes, until dates soften and water almost evaporates.
   
   
3. In a large bowl, combine Weet-Bix, flour, sugar, coconut and carrot. Make a well in centre. Pour in dates, butter and juice. Mix well, and press into slice pan, smoothing with the back of a spoon.
   
   
4. Bake 15-20 minutes, until edges brown slightly. Allow to cool in pan.
   
   
5. ICING: In a small bowl, combine all ingredients. Stir until smooth. Spread over cooled slice. Allow to set before slicing into triangles.
