Chicken in peanut sauce

INGREDIENTS
2 tablespoons oil
1 onion, cut into wedges
1 teaspoon crushed garlic
2 teaspoons curry powder
600g chicken breast fillets, cut into strips
½ cup chicken stock
¼ cup honey
¼ cup crunchy peanut butter
steamed rice, sliced green onion, coriander leaves, to serve
METHOD
- Heat oil in a large frying pan on high. Sauté onion for 3-4 minutes, until tender. Add garlic and curry powder. Cook, stirring, for 1 minute, until fragrant. Add chicken and cook for 4-5 minutes, until browned.
- Stir in stock, honey
and peanut butter, until combined. Bring to the boil on high. Reduce
heat to low and simmer for 8-10 minutes, until thickened slightly and chicken is cooked through.
- Serve chicken with steamed rice. Top with green onion and coriander leaves.
