Almond cinnamon biscuits

INGREDIENTS
1¾ cups self-raising flour
1 cup brown sugar
¾ cup ground almonds
125g butter, melted
1 egg
½ teaspoon vanilla extract
CINNAMON SUGAR
1 tablespoon caster sugar
2 teaspoons ground cinnamon
METHOD
- Preheat oven to moderate, 180°C. Lightly grease and line 4 oven trays with baking paper.
- Sift flour into a large bowl. Stir in sugar and almonds. Blend in butter, egg and vanilla.
- CINNAMON SUGAR. In a small bowl, combine sugar and cinnamon.
- Spoon teaspoonfuls of mixture onto prepared trays about 2cm apart. Flatten slightly and sprinkle with cinnamon sugar.
- Bake for 10-15 minutes, until golden. Cool on trays for 5 minutes before transferring to a wire rack to cool completely.
- Store biscuits in an airtight container for up to 2 weeks.
