Chocolate vanilla slice

INGREDIENTS
1 cup boiling water
2 tablespoons instant
coffee granules
375g milk coffee biscuits
2 x 100g packets instant vanilla
pudding mix
600ml thickened cream
1½ cups milk
150g milk chocolate, chopped
50g butter
METHOD
- Lightly grease a 20 x 30cm slice pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
- Combine water and coffee in a medium shallow bowl. Dip half the biscuits, one at a time, into coffee mixture. Arrange over base of pan, cutting to fit.
- In a medium bowl, combine pudding mix, cream and milk. Using an electric mixer, beat for 1 minute, until mixture thickens. Spread mixture over biscuits, smoothing top.
- Dip remaining biscuits into coffee mixture. Place over filling, to cover.
- Combine chocolate and butter in a heatproof bowl. Place over a saucepan of simmering water and stir until smooth. Spread over biscuits. Cover and chill until set. Serve slice cut into squares using a hot knife.
TOP TIP- You will need 1½ packets of biscuits for this recipe. Store the remaining biscuits in an airtight container.
