Cherry chews

INGREDIENTS
1 cup self-raising flour, sifted
1 cup icing sugar, sifted
125g butter, melted
extra icing sugar,
for dusting
TOPPING
¾ cup caster sugar
½ cup chopped glacé cherries
½ cup coconut
½ cup chopped walnuts
¼ cup plain flour
½ teaspoon baking powder
2 eggs, lightly beaten
METHOD
- Preheat oven to moderate, 180° C.Lightly grease and line the base and 2 long sides of a 20 x 30cm slice pan, allowing paper to extend by 2cm.
- In a large bowl, combine flour, icing sugar and butter. Press mixture firmly into pan.
- TOPPING. In a bowl, combine sugar, cherries, coconut and walnuts. Sift flour and baking powder together over sugar mixture. Mix well. Stir eggs until well combined. Spread over base.
- Bake for 35-40 minutes, until cooked when tested with a skewer. Cool in pan for 5 minutes before lifting onto a wire rack to cool completely. Cut into squares and serve dusted with icing sugar.
TOP TIP- Pecans can be used in place of the walnuts.
- Store these chews in an airtight container.
