INGREDIENTS

½ cup water
1/3 cup soy sauce
¼ cup pineapple juice
4 green onions, thinly sliced, plus extra to serve
1 tablespoon brown sugar
1 level teaspoon mustard powder
1kg chicken wings
Steamed rice, to serve

METHOD

  1. In a large saucepan combine water, soy sauce, juice, onions, sugar and mustard powder. Mix well.
  2. Add chicken and stir well. Bring to the boil. Reduce heat and simmer, covered, for 40-45 minutes until chicken is tender — remove lid for final 15 minutes of cooking.
  3. Serve topped with extra green onion. Accompany with steamed rice.


Top tip
Chicken could also be cooked in an oven bag — add 1 tablespoon plain flour to the marinade mix. Prepare and secure bag as directed. Place in a baking dish. Bake in a hot oven, 200°C, for 35-40 minutes.
