INGREDIENTS
125g butter, chopped at room temperature
1 cup caster sugar
1 egg
1½ cups self-raising flour
2 tablespoons cocoa
¾ cup sultanas
½ cup pitted dates, chopped
½ cup choc chips
½ cup pecan nuts, chopped
METHOD
- Preheat oven to slow, 160°C. Lightly grease and line an 18 x 28cm slice pan.
- Using an electric mixer, beat butter and sugar in a medium bowl, until pale and creamy. Add egg, beating well.
- Sift flour and cocoa together. Fold into creamed mixture. Add remaining ingredients and mix until just combined.
- Press into prepared pan. Bake for 30 minutes. Cut into squares while still warm. Store in an airtight container.
