Zucchini bread

INGREDIENTS
2 eggs
1 cup raw sugar
½ cup vegetable oil
2 teaspoons vanilla extract
1½ cups plain flour, sifted
1½ teaspoons ground cinnamon
1 teaspoon bicarbonate of soda
¼ teaspoon baking powder
1 cup grated zucchini
½ cup chopped walnuts
icing sugar, for dusting
butter, to serve
METHOD
- Preheat oven to moderate, 180°C. Grease a 14 x 21cm loaf pan and line with baking paper.
- Using an electric mixer, beat eggs until light and fluffy. Add sugar, oil and vanilla. Beat 5-10 minutes, until thick and pale.
- Sift together flour, cinnamon, bicarbonate of soda and baking powder. Fold into egg mixture with zucchini and walnuts.
- Spoon into pan. Bake 55-60 minutes. Dust with icing sugar. Serve warm, with butter.
