Tuna pie

INGREDIENTS
425g can tuna in brine, drained, flaked
1 large carrot, coarsely grated
2 eggs, plus 1 extra, lightly beaten
1 onion, finely chopped
½ cup cubed cheddar cheese
¼ cup mayonnaise
¼ cup dried breadcrumbs
4 sheets frozen puff pastry, thawed
Salad, to serve
METHOD
- Preheat oven to hot, 200°C. Lightly grease a 20 x 30cm slice pan.
- In a large bowl, combine tuna, carrot, eggs, onion, cheese, mayonnaise and breadcrumbs. Season to taste.
- Ease 2 sheets of pastry into base of prepared pan, so that pastry comes up the sides of pan. Spoon mixture into pastry, smoothing top. Cover with remaining pastry, trimming to fit. Brush with extra egg.
- Bake for 30-35 minutes until golden. Cut into squares and serve with salad.
