Melting moments by Marianne Hamilton, Terrigal, NSW
INGREDIENTS
250g unsalted butter, chopped, at room temperature 1/3 cup pure icing-sugar, sifted
1/3 cup cornflour
FILLING
1½ cups pure icing-sugar, sifted
40g butter, at room temperature
3 teaspoons vanilla essence
1-2 teaspoons hot water, if required
METHOD
- Preheat oven to moderately slow, 160°C. Line 2 baking trays with baking paper.
- In a small bowl, using an electric mixer, beat butter and icing sugar together until creamy. Gradually beat in flour and cornflour, until combined.
- Roll 2 teaspoonfuls of mixture at a time into balls. Arrange 2cm apart on prepared trays. Using a lightly floured fork, flatten slightly.
- Bake for 15-20 minutes until golden and firm. Cool on trays for 5 minutes before transferring to a wire rack to cool completely.
- FILLING. Meanwhile, beat icing sugar, butter and vanilla together until creamy, adding a little hot water if necessary. Use to sandwich 2 biscuits together. Store in an airtight container.
