Simple cheesecake slice
INGREDIENTS
250g packet scotch finger biscuits
300ml thickened cream
395g can sweetened condensed milk, chilled
½ cup lemon juice
Strawberries, to serve
METHOD
- Lightly grease a 20 x 30cm slice pan. Line base and sides with baking paper, extending paper 2cm above pan edge. Line base with biscuits, flat side up.
- In a small bowl, using an electric mixer, whip cream until soft peaks form.
- Combine condensed milk and juice in a large bowl. Fold cream into mixture until combined. Pour over biscuits. Chill overnight or until set.
- Cut into squares to serve, and top with hulled, sliced strawberries.
