Date and lemon slice

Date and lemon slice
INGREDIENTS
1 cup self-raising flour
1 cup shredded coconut, plus extra ¼ cup to serve
1 cup chopped dates
½ cup caster sugar
1 teaspoon finely grated lemon zest
125g butter, melted
1 egg, lightly beaten
Lemon icing
¾ cup icing sugar
2 tablespoons lemon juice
15g butter, melted
METHOD
- Preheat oven to moderate, 180°C. Lightly grease an 18 x 28cm slice pan. Line base and sides with baking paper, extending sides 2cm above pan edge.
- Sift flour into a large bowl. Stir through coconut, dates, sugar and zest. Blend in butter and egg, mixing well.
- Spread mixture into prepared pan. Bake for 30-35 minutes until firm and golden. Cool in pan.
- Lemon icing: Meanwhile, in a bowl, combine all ingredients, stirring until smooth. Spread over cooled slice. Sprinkle with extra coconut. Put aside to set. Serve cut into squares. Store in an airtight container.
