Spanish skewers

INGREDIENTS
10 medium green prawns, peeled, deveined, tails intact
5 button mushrooms, halved
1/3 cup olive oil
4 garlic cloves, crushed
1 red capsicum, seeded, cubed
1 medium red onion, cut into 2cm pieces
1 chorizo sausage, sliced
10 bamboo skewers, soaked rocket, to serve
METHOD
- Preheat a char-grill on high.
- Place prawns in a bowl with mushrooms, oil and garlic. Season to taste and toss well. Stand for 10 minutes.
- Thread prawns, vegetables and chorizo onto skewers. Char-grill for 2-3 minutes, each side, until the prawns change colour and the vegetables are tender. Serve with rocket.
