Uncle Bill's rice pudding

INGREDIENTS
1 litre milk
¾ cup medium-grain white rice
¼ cup caster sugar
1 teaspoon vanilla essence
2 eggs, lightly beaten
sliced banana and dark brown sugar to serve
METHOD
1. Bring milk to boil in a large pan. Add rice; simmer, stirring occasionally, over a low heat, for about 35 minutes or until rice is tender.
2. Stir in sugar and vanilla, continue stirring until sugar is dissolved. Remove from heat. Stir in eggs until combined.
3. Serve rice pudding topped with sliced banana; sprinkle with sugar.
