Macadamia and cranberry slice

self-raising flour, 1½ cups, sifted
dried cranberries, 1 cup
macadamia nuts, chopped, ¾ cup
butter, 185g, melted
brown sugar, 1¼ cups
egg, 1, lightly beaten
vanilla essence, 1 teaspoon
icing sugar, to dust
- Preheat oven to moderate, 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper.
- In a large bowl, combine flour, cranberries and macadamia
nuts. Stir in butter, sugar, egg and vanilla. Spoon into pan and smooth surface.
- Bake 20-25 minutes, until cooked when tested. Cool in pan. Dust with icing sugar and cut into squares. Keep sealed in an airtight container in the fridge for up to one week.
- Top with sliced strawberries or any other fruit of your choice.
