Triple chocolate cake

Triple chocolate cake sent in by P.Morgan,

INGREDIENTS

250g butter, chopped
200g dark chocolate, chopped
¼ cup milk
1 cup caster sugar
3 eggs, lightly beaten
1 cup self-raising flour
¼ cup cocoa powder
100g milk chocolate, finely chopped
icing sugar, thick cream, to serve
METHOD

  1. Preheat oven to slow, 160°C. Lightly grease and line a deep, 22cm round cake pan with baking paper.

  2. In a medium saucepan, combine butter, dark chocolate and milk. Stir over a low heat until melted and smooth. Transfer to a large bowl. Cool 5 minutes.

  3. Whisk sugar and eggs into chocolate mixture. Sift flour and cocoa together
    and fold into chocolate mixture.

  4. Stir through half chopped chocolate. Pour into pan. Sprinkle with remaining chocolate. Bake 1¼ hours, until skewer inserted in centre comes out with moist crumbs. Cool completely in pan. Dust with icing sugar and serve with cream.
