Banana chocolate cake

Banana chocolate cake

Banana chocolate cake sent in by Patricia Briggs, Penshurst, NSW.
INGREDIENTS

1½ cups wholemeal self-raising flour
¾ cup self-raising flour
2/3 cup cocoa powder
½ teaspoon bicarbonate of soda
1 cup caster sugar
1 cup mashed banana
¾ cup buttermilk
½ cup vegetable oil
2 eggs, lightly beaten
ICING
1½ cups icing-sugar mixture
1 tablespoon cocoa powder
2 tablespoons milk, warmed
METHOD

  1. Preheat oven to moderate, 180°C. Lightly grease a 24cm fluted ring pan.

  2. Sift flours, cocoa and bicarbonate of soda together into a bowl. Return husks. Stir in sugar.

  3. In a jug, mix banana, buttermilk, oil and eggs together. Make a well in centre of dry ingredients. Pour in banana mixture, stirring to combine.

  4. Spoon mixture into pan, smoothing surface. Bake 40-45 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes, then turn out onto a wire rack to cool completely.

  5. ICING: Sift icing sugar and cocoa together into a bowl. Stir in milk until smooth. Pour over cooled cake. Set aside 20 minutes until icing sets. Store in airtight container.
