Gluten-free apple tarts

Gluten-free apple tarts sent in by Valmai Jennings, Nambour, Qld.
INGREDIENTS

1¼ cups gluten-free plain flour
1/3 cup caster sugar, plus extra, to sprinkle
¼ cup almond meal
125g chilled butter, chopped
1 egg
1-2 tablespoons chilled water
400g can pie apples
½ cup sultanas
1 teaspoon mixed spice
thickened cream, to serve
METHOD

MAKES 12



  1. Sift flour into a large mixing bowl. Stir in sugar and almond meal. Using fingertips, rub in butter until mixture resembles breadcrumbs.

  2. Stir in egg and 1 tablespoon water until a soft dough forms - add extra water if required. Roll out between 2 sheets of baking paper until 5mm thick. Chill for 30 minutes until firm.

  3. Preheat oven to moderate, 180°C . Lightly grease a 12-hole muffin tray.

  4. In a bowl, stir apples, sultanas and mixed spice together.

  5. Using an 8cm pastry cutter, cut 12 rounds from chilled pastry. Line muffin tray with pastry, pressing together to seal any cracks. Prick bases with a fork and bake 10 minutes.

  6. Spoon filling into cases and sprinkle with extra sugar. Bake for a further 20 minutes, until golden brown. Serve tarts warm or
    cold with thickened cream.
