Sweet potato and cheese bread tarts

Sweet potato and cheese bread tarts sent in by Warren Vaughan, Wanneroo, WA.
INGREDIENTS

9 large slices white bread
15g butter, at room temperature
1 cup cooked, mashed sweet potato
1 cup grated tasty cheese
1 rindless bacon rasher, chopped
1 egg, lightly beaten
2 green onions, finely chopped
½ teaspoon ground paprika
sesame seeds, to sprinkle
METHOD

MAKES 36



  1. Preheat oven to moderately slow, 160°C .

  2. Remove crusts from bread. Use a rolling pin to flatten each slice. Spread with
    butter and cut into quarters. Press each quarter into a mini muffin pan recess, buttered side down.

  3. In a bowl, combine sweet potato, cheese, bacon, egg, onion and paprika. Mix well and season to taste.

  4. Place a teaspoonful of mixture into each bread shell and sprinkle with
    sesame seeds. Bake for 25-30 minutes, until crisp and golden.


TOP TIP
  • To cook sweet potato, peel, cut into chunks and steam or boil until tender, or drizzle with olive oil and bake.
