Pork and cheese pies

INGREDIENTS
500g minced pork
½ cup finely chopped
roasted capsicum
¼ cup chopped basil
2 tablespoons tomato sauce
2 tablespoons
barbecue sauce
1 garlic clove, crushed
4 sheets puff pastry
½ cup grated tasty cheese
rocket and extra sauce,
to serve
TOPPING
5 large potatoes, peeled,
cut into chunks
1/3 cup milk
20g butter
METHOD
- Preheat oven to hot, 200°C. Lightly grease 2 x 12-cup muffin pans.
- TOPPING: Cook potatoes in a large saucepan of boiling, salted water for 10-15 minutes, until tender. Drain well and tip into a bowl. Mash together with milk and butter. Season.
- Meanwhile, heat a large frying pan on high. Brown mince for 3-4 minutes, breaking up with a wooden spoon as it cooks. Add capsicum, basil, sauces and garlic. Stir through and cook for 1 minute.
- Using a 10cm cutter, cut 16 rounds from pastry. Push pastry into recesses. Spoon mince mixture into pastry cases. Pile mashed potato on top.
- Sprinkle with cheese. Bake for 25-30 minutes, until pastry is crisp and topping is golden. Serve hot pies with rocket salad and extra sauce.
