Strawberry & Toblerone friands

INGREDIENTS
1¼ cups icing sugar mixture, sifted
1 cup almond meal
2/3 cup plain flour, sifted
5 egg-whites, lightly whisked
185g butter, melted
100g Toblerone, chopped
3 strawberries, hulled, sliced
METHOD
- Preheat oven to hot, 200°C. Lightly grease a 12-hole friand pan.
- In a large bowl, combine icing sugar, meal and flour. Mix in egg-whites, then butter, stirring until combined. Fold Toblerone through.
- Divide mixture among recesses. Top with strawberries, pressing in gently.
- Bake for 20-25 minutes, until golden and firm. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Serve warm or at room temperature.
TOP TIPS- This is a great way to use leftover egg-whites.
- Wrap friands individually and freeze for up to 2 months.
- If liked, reserve some Toblerone and press into the top of each friand with the strawberries
