Tofu patties with Thai salsa

An easy vegetarian recipe.
INGREDIENTS
420g can cannelini beans, rinsed, drained
300g firm tofu, drained
1½ cups fresh wholemeal breadcrumbs
1 red onion, roughly chopped
1/3 cup mint leaves
1/3 cup coriander leaves
1 egg, lightly beaten
2 tablespoons teriyaki marinade
1 garlic clove, crushed
¼ cup self-raising flour
2 tablespoons oil
8 turkish rolls, split, toasted
alfalfa sprouts, coriander leaves, to serve
SALSA
3 roma tomatoes, finely chopped
2 tablespoons chopped coriander
1 small red chilli, finely chopped
2 tablespoons lime juice
1 teaspoon brown sugar
METHOD
- Place beans, tofu, breadcrumbs, onion, herbs, egg, teriyaki marinade and garlic in a food processor. Process until smooth.
Add flour. Process until combined. Chill.
- Heat oil in a medium frying pan on high. Spoon 1/3 cupfuls of mixture into pan. Cook for 2-3 minutes each side, until firm and golden. Drain on paper towel.
- SALSA. In a bowl, combine all ingredients.
- Serve patties topped with salsa on rolls, with extra salsa on the side. If preferred, serve without roll, with salad and extra teriyaki marinade.
