Pasta fantastico: Prawn, snow pea and chilli fettuccine
I am always amazed at the seemingly unlimited variety of pasta dishes you can make. From the most often made, spaghetti bolognaise, to the more exotic dishes, everyone agrees to just loving it. Our recipes this week include some old favourites, plus some great new combinations. Buon appetito!

INGREDIENTS
375g packet fresh fettuccine
¼ cup olive oil
2 garlic cloves, crushed
500g medium green prawns, peeled, deveined, tails intact
100g snow peas, trimmed
¼ cup sweet chilli sauce
Sliced fresh chilli (optional), green salad, to serve
METHOD
- Cook pasta in a large saucepan of boiling salted water, following packet instructions. Drain well, return to pan.
- Meanwhile, heat oil in a large frying pan on medium. Add garlic and saute for 30 seconds. Add prawns and cook, tossing, for 2-3 minutes, until they change colour.
- Stir through snow peas and chilli sauce. Cook, stirring, for 1 minute or until heated through.
- Add to pasta in pan, season to taste and toss to combine. Serve with sliced chilli and accompany with green salad.
Top tipA marinara mix can be used in place of prawns.
