Mince around the world: Lamb and spinach gozleme
You can create an incredible array of meals with mince whether it's beef, chicken, lamb, pork, turkey or various combinations now available. Great for the budget, make sure you have plenty on hand in the freezer to whip up some of these delicious meals for the whole family.

INGREDIENTS
4 cups plain flour
1 teaspoon salt
1½ cups warm water
Lemon wedges, to serve
Filling:
1 tablespoon oil
1 onion, finely chopped
2 garlic cloves, crushed
1 tablespoon ground cumin
1 tablespoon sumac
1-2 teaspoons chilli flakes (optional)
500g lamb mince
200g feta, crumbled
150g baby spinach leaves, roughly chopped
METHOD
- Sift flour and salt together into a large bowl. Make a well in the centre and gradually stir in water, mixing to form a firm dough.
- Knead dough on floured surface for about 5 minutes, or until smooth and elastic. Return to bowl. Cover with a clean tea towel.
- Filling: Heat oil in a large frying pan on high. Sauté onion and garlic for 3-4 minutes, until tender. Stir in cumin, sumac and chilli and cook for 1 minute. Add mince. Cook for 4-5 minutes, breaking up lumps with the back of a spoon, until browned. Transfer mixture to a bowl. Cool for 10 minutes. Stir cheese and spinach through. Season to taste.
- Divide dough into 6 portions. Roll each piece into a 30 x 40cm rectangle. Transfer to a greased tray. Spoon filling evenly over one half of each rectangle. Fold over dough to enclose and fold over edges to seal.
- Heat a large frying pan on medium. Brush gozleme with oil and cook for 3-4 minutes each side, until browned and crisp. Repeat with remaining gozleme. Cut into squares. Serve with lemon wedges.
