INGREDIENTS
1 cup plain flour
1 tablespoon caster sugar
1¼ cups milk
2 eggs
75g milk chocolate, melted
15g butter, melted
Whipped cream, raspberries, grated chocolate, to serve
METHOD
- Sift flour into a bowl. Stir in sugar. Make a well in centre of dry ingredients.
- Gradually whisk in combined milk and eggs to form a smooth batter, the consistency of pouring cream. Whisk in chocolate. Set aside.
- Heat a crepe pan or small frying pan on medium. Brush with a little butter. Pour ¼ cup of batter into pan, swirling pan to cover base. Cook for 1-2 minutes each side. Transfer to a plate.
- Continue with remaining batter, brushing pan with butter as required.
- Serve crepes folded, topped with cream, berries and a little grated chocolate.
Top tipIf liked, drizzle with a little chocolate sauce: melt 1/3 cup chocolate pieces with ½ cup cream in a small saucepan (or microwave oven). Stir well.
