Corned beef: To soak or not to soak?

"Before cooking, is it better if you immerse corned beef/silverside in water overnight or not? If yes, why?"

Answer

These days it isn't necessary to soak corned beef — this was probably done once to remove salt. Today, the beef is cured less intensely.

All I would do is rinse the meat a little before placing it in a saucepan of water, seasoned with a little vinegar, brown sugar, cloves, peppercorns and a bayleaf.
