"Before cooking, is it better if you immerse corned beef/silverside in water overnight or not? If yes, why?"
These days it isn't necessary to soak corned beef this was probably done once to remove salt. Today, the beef is cured less intensely.
All I would do is rinse the meat a little before placing it in a saucepan of water, seasoned with a little vinegar, brown sugar, cloves, peppercorns and a bayleaf.
