Curry leaves are used extensively in cooking curries and other aromatic Indian-style food. They are often used fresh, but at other times the leaves are oven-dried or toasted. They are always removed before serving.
Curry leaves may be kept in the fridge in an airtight container or snap lock bag for some time, but are better kept frozen do not remove them from the branches before usage!
