Salami, sage and parmesan pasta

Salami, sage and parmesan pasta
INGREDIENTS
500g spaghetti or other pasta of choice
1/3 cup shaved parmesan cheese
40g butter, chopped
250g punnet cherry tomatoes, halved
100g salami, chopped
1/3 cup kalamata olives
¼ cup chopped sage leaves
1 garlic clove, crushed
extra parmesan, to serve
METHOD
- Cook pasta in a saucepan of boiling, salted water for 8-10 minutes following packet instructions. Drain and return to saucepan.
- Toss parmesan and butter through pasta over a low heat for 1-2 minutes until melted. Mix remaining ingredients through. Serve with extra parmesan and crusty bread if liked.
TOP TIPs- Tomatoes, salami and olives can be sauteed in a little oil before adding to pasta if preferred.
- If liked, add a can of crushed tomatoes or prepared napolitana sauce and heat through before serving.
