Sticky pork with brown rice

INGREDIENTS
1 tablespoon hoisin sauce
2 teaspoons soy sauce
2 teaspoons brown sugar
2 teaspoons grated ginger
350g pork fillet, trimmed
1 cup brown rice
150g snow peas, trimmed, blanched
1 bunch broccolini, trimmed, blanched
1 long red chilli, thinly sliced
1 teaspoon sesame seeds, toasted
METHOD
- Preheat oven to 200°C.
- In a large bowl, combine hoisin, soy, sugar and ginger. Mix well. Add pork fillet, tossing to coat in marinade. Chill for 30 minutes.
- Meanwhile, cook rice in a medium saucepan of boiling, salted water for 30-35 minutes, until just tender. Drain well.
- While rice is cooking, heat an ovenproof non-stick frying pan on high. Cook drained pork fillet (retain marinade) for 4-5 minutes, turning until sealed. Pour marinade over and simmer for 1 minute.
- Bake for 8-10 minutes, until cooked to taste. Rest, covered, for 5 minutes. Slice and serve with rice and vegetables. Sprinkle with chilli and sesame seeds.
