Teriyaki chicken with noodles

INGREDIENTS

2 tablespoons oil
1 onion, thinly sliced
500g chicken thigh fillets, trimmed, sliced
1 small zucchini, cut into 4cm batons
80g green beans, trimmed, halved
¼ cup teriyaki sauce, plus extra to serve
1 tablespoon honey
80g packet 2 minute noodles
shredded green onion, to serve

METHOD

1. Heat oil in a large frying pan on high. Stir-fry onion for 1-2 minutes. Add chicken. Stir-fry for 2-3 minutes until browned. Add zucchini and beans. Stir-fry for 3-4 minutes until just tender.
   
2. Stir in sauce and honey. Stir-fry for 3-5 minutes until thickened slightly.
   
3. Meanwhile, cook noodles following packet instructions (discarding flavouring sachet). Toss noodles through stir-fry. Serve topped with onion.
