Greek-style macaroni cheese (guilt free!)

INGREDIENTS
30g low-fat spread
2 tablespoons plain flour
3 cups low-fat milk
100g baby spinach
10 cherry tomatoes, halved
1/3 cup sliced pitted black olives
4 green onions, sliced
1 tablespoon chopped parsley
350g macaroni, cooked, drained
¾cup grated low-fat tasty cheese
2 tablespoons grated parmesan
60g low-fat feta, crumbled
1 tablespoon oregano leaves
salad and crusty bread, to serve
METHOD
- Melt spread in a large saucepan on medium. Add flour and cook, stirring, for 1 minute. Remove from heat. Blend in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer for 3 minutes. Season to taste.
- Add spinach, tomatoes, olives, onions and parsley to sauce. Heat, stirring, for 3-5 minutes. Mix cooked pasta, tasty cheese and parmesan through. Preheat grill to high.
- Spoon equal amounts into 4 ovenproof gratin dishes. Sprinkle with an even amount of feta and oregano. Grill for 1-2 minutes, until cheese is golden. Serve with salad and crusty bread.
