Chocolate melting moments with coffee cream
Take time out this weekend to bake some of our mouth-watering biscuits and slices. You'll find it really economical as well as fun, and your family will love the aroma of freshly baked goodies coming from the kitchen. So fill up your cookie jars and watch them smile!

INGREDIENTS
200g butter, chopped, at room temperature
1/3 cup icing sugar mixture
1 teaspoon vanilla extract
1 cup plain flour
1/3 cup cornflour
¼ cup cocoa powder
Cocoa powder, for dusting
Coffee cream:
50g butter
½ cup icing sugar mixture, sifted
2 teaspoons instant coffee
1 teaspoon boiling water
METHOD
- Preheat oven to moderately slow, 160°C. Lightly grease and line 2 oven trays with baking paper.
- In a large bowl, using an electric mixer, beat butter, icing sugar and vanilla until light and fluffy.
- Stir in combined sifted flours and cocoa in two batches. Fit a piping bag with a 1.5cm star nozzle, fill bag with mixture (see tip) and pipe 28 biscuits, 4cm wide and 3cm apart, onto prepared trays.
- Bake for 15-20 minutes, until slightly firm. Cool on trays for 5 minutes before transferring to a wire rack to cool completely.
- Coffee cream: In a small bowl, using an electric mixer, beat butter, icing sugar and combined (cooled) coffee and water until pale.
- Sandwich biscuits together with Coffee Cream. Dust tops with cocoa. Store in an airtight container for 3-5 days.
Top tipIf you don't have a piping bag, form into walnut-sized balls and arrange on trays. Flatten slightly with a floured fork before baking.
