Go nuts for macadamias: Macadamia and chocolate biscotti

INGREDIENTS
2 cups plain flour
½ teaspoon bicarbonate of soda
1 cup chopped macadamias
¾ cup caster sugar
60g milk chocolate, chopped
1 tablespoon instant coffee powder
2 teaspoons boiling water
3 eggs, lightly beaten
2 teaspoons Grand Marnier
Finely grated zest 1 orange
METHOD
- Preheat oven to moderate, 180°C. Lightly grease and flour an oven tray.
- Sift flour and bicarbonate of soda into a large bowl. Stir in macadamias, sugar and chocolate.
- In a jug, dissolve coffee powder in water. Whisk in eggs, Grand Marnier and grated orange rind.
- Make a well in the centre of the dry ingredients. Add egg mixture and mix to form dough.
- Turn dough onto a lightly floured surface. Cut in half and shape into 2 logs, about 5cm wide. Place on prepared tray and bake for 20-25 minutes.
- Cool. Using a serrated knife, slice into 0.5cm pieces. Arrange on trays and bake for a further 5-10 minutes, until crisp.
- Transfer to a wire rack to cool. Store biscotti in an airtight container.
Top tip:Serve biscotti with coffee, desserts or crumbled over ice-cream.
