Luscious light chocolate cake: 3.24g fat per serve

INGREDIENTS
60g low-fat spread
¾ cup caster sugar
1 egg
1½ cups self-raising flour
2 tablespoons cocoa
½ cup low-fat milk
¼ teaspoon bicarbonate of soda
¼ cup boiling water
Mocha icing:
1 cup icing sugar
1 tablespoon cocoa
1-2 tablespoons boiling water
¼ teaspoon coffee powder
METHOD
- Preheat oven to moderate, 180°C. Spray a 20cm round cake pan with oil and line base.
- In a bowl, using an electric mixer, cream spread and sugar together. Beat in egg.
- Sift flour and cocoa together well. Fold into creamed mixture alternately with milk, starting and ending with flour.
- Combine bicarbonate of soda and water. Fold into mixture. Pour into prepared pan.
- Bake for 35-40 minutes, until cooked when tested. Cool in pan for 5 minutes. Transfer to a wire rack to cool completely.
- Mocha icing: Sift icing sugar and cocoa together into a bowl. In a jug, combine water and coffee. Blend into icing sugar mixture until smooth and spreadable. Spread over cold cake.
