Choc chip and almond slice

Choc chip and almond slice
INGREDIENTS

150g butter, chopped, at room temperature
½ cup brown sugar
1 teaspoon vanilla extract
2 eggs
¾ cup dark choc bits
¾ cup almond meal
½ cup plain flour
½ cup self-raising flour
1 tablespoon milk
½ cup slivered almonds
60g white chocolate, melted (optional)
METHOD

  1. Preheat oven to slow, 160°C. Lightly grease an 18 x 28cm slice pan. Line the base and 2 long sides with baking paper, allowing sides to overhang.
  2. In a bowl, using an electric mixer, beat butter and sugar together until pale and creamy. Beat in the vanilla. Add the eggs, one at a time, beating well after each addition. Fold in choc bits, almond meal, combined flours and milk until well combined.
  3. Spread the mixture into prepared pan. Sprinkle with almonds. Bake for 25-30 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan to cool completely.
  4. Use a fork to drizzle the melted white chocolate over the slice. Set aside to harden. Cut into squares to serve. Store in an airtight container.


Top tip
Make in advance and freeze without the chocolate drizzle.
