Happy New Year: Chilli plum chicken balls
Say goodbye to 2008 in style with this fabulous party food and lots of Champagne! Share the cooking with family and friends to make preparation easy, and use disposable plates and glasses to make cleaning up simple. We wish you all the best for 2009.

INGREDIENTS
500g chicken mince
¼ cup dry breadcrumbs
¼ cup chopped coriander leaves
¼ cup chopped mint leaves
¼ cup coconut milk
1 egg
1 tablespoon plum sauce
1 tablespoon oyster sauce
1 tablespoon fish sauce
1 small red chilli, finely chopped
2 garlic cloves, crushed
Coriander leaves to garnish
Chilli plum dipping sauce:
¼ cup sweet chilli sauce
¼ cup plum sauce
METHOD
- Preheat oven to hot, 200°C. Line an oven tray with baking paper.
- In a bowl, combine chicken, breadcrumbs, coriander, mint, coconut milk, egg, sauces, chilli and garlic, then season to taste.
- Shape tablespoonfuls of mixture into balls. Arrange on prepared tray. Bake 15-20 minutes, until cooked through.
- Chilli plum dipping sauce: Combine sauces in a bowl to accompany the chicken balls.
Top tipMake the chicken balls ahead and chill until required. Reheat in a microwave oven on high (100%) for 1 minute.
