Kris Smith's Apple crumble

gluten free flour, 1 1/2 cups
shredded coconut, 1 1/3 cups
sugar, 1 cup
almond meal, 3/4 cup
flaked almonds, 3/4 cup
butter, 125g (make sure butter is soft)
apples (granny smith), peeled, cored sliced
sugar, 1/2 cup
vanilla bean, 1, split, scraped
ground cinnamon, 1/4 teaspoon
whole cloves, 2 (remove after cooked)
- Preheat oven to slow, 150C.
- In a bowl, combine all ingredients, stirring to form a crumbly mixture.
- APPLE In a large saucepan, combine all ingredients. Cook, stirring, on medium heat 15- 20 minutes until tender (use a fork to test).
- Once apple is cool, spoon into an ovenproof dish (you could add canned other fruit such as raspberries, blueberries). Sprinkle with crumble mix. Bake 35-40 minutes until golden.
