Beef burger with lime and red onion relish

INGREDIENTS
olive oil, 2 tablespoons
onion, 1, finely chopped
garlic cloves, 2, crushed
beef mince, 500g
parsley, chopped, ¼ cup
round white rolls, 4
mayonnaise, ½ cup
baby spinach leaves, 50g
shoestring fries, to serve
LIME & RED ONION RELISH
butter, 30g, chopped
red onions, 2, thinly sliced
brown sugar, 2 tablespoons
long red chilli, 1, seeded, finely chopped
lime, 1, grated zest and juice
METHOD
- Heat half oil in a large frying pan on high. Saute onion and garlic 3-4 minutes, until tender. Transfer to a large bowl and cool.
- LIME & RED ONION RELISH: In same pan, melt butter on high. Saute onion 4-5 minutes, until tender. Blend in sugar, chilli, zest and juice. Cook, stirring, on medium heat, for 8-10 minutes, until onion caramelises.
- Meanwhile, add beef and parsley to onion mixture in bowl. Season to taste. Shape mixture into 4 even-sized, flattened patties.
- Heat an oiled barbecue plate or large frying pan on medium. Cook patties 4-5 minutes each side, until browned and cooked through.
- Halve rolls horizontally. Spread bases with mayonnaise. Top each with a patty, spinach leaves and onion relish. Cover with tops of rolls. Serve with fries.
TOP TIP- It is important that burger patties are cooked all the way through – never serve burger pink in the middle.
