Moroccan lamb burgers

INGREDIENTS
lean lamb mince, 500g
coriander, chopped, 1/3 cup
pine nuts, ¼ cup, toasted, chopped
egg, 1, lightly beaten
garlic cloves, 2, crushed
ginger, grated, 1 teaspoon
ground cumin, 1 teaspoon
olive oil, 1 tablespoon
soft bread rolls, 4, halved, toasted
tomato and chilli chutney, 1/3 cup
tomato, 1, sliced
rocket leaves, 1 cup
lemon wedges, to serve
METHOD
- In a large bowl combine mince, coriander, nuts, egg, garlic, ginger and cumin. Season to taste and mix well. Shape into 4 even sized, flattened patties. Place on a tray and chill 5 minutes.
- Heat oil in a large frying pan on medium. Cook patties 4-5 minutes each side, until cooked through and golden. Drain on paper towel.
- Spread one side of each roll with 1 tablespoon chutney. Top each with a patty, tomato slices and rocket. Serve with a squeeze
of lemon.
TOP TIP- If liked, serve with a dollop of natural yoghurt.
- It’s important to cook patties all the way through.
- If preferred, brown each side then finish them off in a moderate, 180°C, oven for 10-15 minutes.
