Coronation chicken and apricot salad

INGREDIENTS

chicken breasts, 2 x 220g
whole-egg mayonnaise, ¾ cup
light sour cream, ¾ cup
mango chutney, 2 tablespoons
rogan josh curry paste,
1 tablespoon
ripe apricots, 4, stones removed, sliced
slivered almonds, ¼ cup
coriander, chopped, ¼ cup, plus extra leaves, to serve
sultanas, 2 tablespoons
iceberg lettuce, 1, cut into wedges
METHOD

  1. Bring a deep frying pan of water to the boil on high. Add chicken, ensuring it is completely covered by liquid. Reduce heat to low. Simmer gently 10-12 minutes. Remove from pan and set aside to cool.

  2. In a large bowl, combine mayonnaise, sour cream, chutney and curry paste. Season to taste.

  3. Thinly slice chicken and add to mayonnaise mixture with apricots, almonds, coriander and sultanas. Toss gently to combine.

  4. Divide lettuce wedges among 4 bowls and spoon chicken mixture over. Garnish with extra coriander leaves to serve.


TOP TIP
  • This is also great as a sandwich filling.

I used cooked banana prawns(cold) instead of the chicken and ued avacado and mango and instead of the apricots and almonds - it was delicious !!!!! Served it like a prawn cocktail as an entree with a pappadum as garnish !!!!! It was amazing - a sure show stopper - got everyone talking.
I was pressed for time last night and decided to make this dish for my mum and one of my daughters. Although I thought that the ingredients sounded kind of odd, I was surprised. It was very easy to make, quick to prepare, and oh so delicious. I will definately make this dish again and be passing the recipe on to my daughters who will love it I am sure. Happy cooking!! (and eating)
