Maple pork with plum salad

INGREDIENTS
pork fillet, 500g, trimmed
olive oil, 1 tablespoon
maple syrup, 2 tablespoons
green beans, 200g, steamed,
to serve
SALSA
ripe plums, 2, stones removed, finely chopped
red onion, ½ small, finely chopped
lime, 1, juice
pistachio nuts, finely chopped,
1 tablespoon
coriander, chopped, 1 tablespoon
long green chilli, 1, seeded, chopped
extra-virgin olive oil, 2 teaspoons
caster sugar, 1 teaspoon
METHOD
- Heat a frying pan on high. Brush pork with oil and season to taste. Cook pork 8-10 minutes, turning on all sides, until well browned and cooked through.
- Add syrup to pan. Cook, stirring, 1 minute until sticky, turning fillet to coat. Remove from pan to a plate. Cover loosely with foil and rest 5 minutes.
- SALSA: In a large bowl, combine all ingredients. Season to taste.
- Slice pork and serve with salsa. Accompany with steamed beans.
TOP TIP- To serve pork with a fresh plum sauce, saute 1 chopped onion in 50g butter. Add 250g peeled, chopped plums and deglaze with ½ cup red wine. Stir in 1 tablespoon sugar and simmer gently 10 minutes, stirring to break up fruit, until thick and glossy. Season to taste.
