Summer vegetable and ricotta pasta

INGREDIENTS
ricotta angolotti pasta,
360g packet
olive oil, 1 tablespoon
green onions, 2, finely sliced
garlic, 2 cloves, finely sliced
asparagus, 1 bunch, trimmed,
cut into 2cm lengths
zucchini, 1, halved lengthways, sliced
frozen peas, 1 cup, thawed
frozen soy beans, 1 cup, thawed
thickened cream, 300ml
lemon zest, 1 teaspoon
parmesan, shaved, ¼ cup
snipped chives, lemon wedges,
to serve
METHOD
- Cook pasta in a large saucepan of boiling salted water following packet instructions.
- Meanwhile, in a large frying pan, heat oil on medium. Saute onion and garlic 1-2 minutes, until tender. Add asparagus and zucchini, tossing 2 minutes, until just tender.
- Add drained pasta to pan with peas, beans and cream. Simmer gently 2 minutes, stirring occasionally, until sauce thickens slightly. Season to taste. Stir zest through. Serve topped with parmesan and chives. Accompany with lemon wedges.
