INGREDIENTS

500g cleaned baby
squid, hoods scored, sliced into strips
juice 1 lemon
2 tablespoons olive oil, plus 2 tablespoons extra
2 garlic cloves, crushed
500g large cooked prawns
12 Sydney rock oysters, shucked
tartare sauce, lemon wedges, to serve
CRAB CAKES
250g packet fresh crabmeat, drained
½ cup panko breadcrumbs, plus ½ cup extra
1 egg, lightly beaten
1 green onion, finely sliced
2 teaspoons Dijon mustard
½ teaspoon paprika
OYSTER VINAIGRETTE
¼ cup sparkling white wine
1 tablespoon white-wine vinegar
1 eschalot, finely chopped
METHOD

  1. In a bowl, combine squid hoods, tentacles, juice, oil and garlic. Cover and chill 30 minutes.

  2. CRAB CAKES: Meanwhile, in a bowl, mix all ingredients together and season to taste. Roll heaped tablespoons into 8 balls. Roll in extra crumbs to coat and flatten slightly. Chill 20 minutes.

  3. OYSTER VINAIGRETTE. In a small jug, combine wine, vinegar and eschalot. Season to taste. Set aside 20 minutes.

  4. Heat extra oil in a large frying pan or barbecue plate on medium. Cook crab cakes 1-2 minutes each side, until golden and crisp. Transfer to paper towel to drain.

  5. Wipe pan or hotplate clean and increase heat to high. Drain squid from marinade. Cook 2-3 minutes, turning, until just cooked through.

  6. Arrange crab cakes, squid, prawns and oysters on platter. Spoon vinaigrette over oysters. Accompany with tartare sauce and lemon wedges.
