Macadamia and chocolate biscotti

INGREDIENTS

2 cups plain flour
½ teaspoon bicarbonate of soda
1 cup chopped macadamias
¾ cup caster sugar
60g milk chocolate, chopped
1 tablespoon instant coffee powder
2 teaspoons boiling water
3 eggs, lightly beaten
2 teaspoons Grand Marnier
grated zest 1 orange
METHOD

MAKES ABOUT 40



  1. Preheat oven to moderate, 180°C. Lightly grease and flour an oven tray.

  2. Sift flour and soda into a large bowl. Stir in macadamias, sugar and chocolate.

  3. In a jug, dissolve coffee powder in water. Cool slightly. Whisk in eggs, Grand Marnier and zest.

  4. Make a well in the centre of the dry ingredients. Add egg mixture and mix
    to a firm dough.

  5. Turn dough onto a lightly floured surface. Cut in half and form into 2 logs, about 5cm wide. Place on prepared tray and bake 20-25 minutes.

  6. Allow to cool. Using a serrated knife, slice into 0.5cm pieces. Arrange on trays
    and bake a further 5-10 minutes, until crisp.

  7. Transfer to a wire rack to cool. Store in an airtight container.


TOP TIP
  • Serve with coffee, desserts or crumbled over ice-cream.
