Chilled tomato consommé

1. In a food processor, process 12 roughly chopped tomatoes, 2 seeded and chopped red capsicum, 1 small red onion, 3 peeled garlic cloves and 1 long green chilli in batches until very smooth. Season to taste.
   
   
2. Add a few drops Tabasco sauce if liked. Place a large sieve over a large bowl or pot. Line sieve with muslin cloth. Pour tomato mixture into sieve.
   
   
3. Set aside to drain in fridge overnight. Discard muslin cloth and pulp. Serve warm or chilled (see tip).

• Add a few poached prawns to this clear consommé and garnish with sliced green onions for an impressive entrée, or churn in an ice-cream maker for a refreshing summer sorbet.
  
• This freezes well in a sealed container for up to 2 months.
