Pesto crusted salmon

INGREDIENTS
2 cups fresh breadcrumbs (see tip)
½ cup prepared pesto
¼ cup chopped macadamia nuts
1 teaspoon sea salt
4 skinless salmon steaks,
bones removed
1 punnet cherry tomatoes, halved
salad leaves, lemon wedges,
to serve
METHOD
- Preheat oven to hot, 200°C. Line an oven tray with
baking paper.
- In a bowl, combine breadcrumbs, pesto, nuts and salt, mixing well. Place salmon on tray (see tip). Sprinkle ½ cup crumb mixture over each steak, pressing lightly with fingertips.
- Bake for 10-15 minutes (depending on thickness of fish), until cooked to your liking.
- Serve with salad and lemon.
TOP TIP- To make the required 2 cups of breadcrumbs, place 4 slices of day-old bread (crusts on and torn) in a food processor and process into crumbs.
- If your fish has skin, remove it or place skin-side down on tray.
